1. Let’s prepare the necessary ingredients

Here are the ingredients needed to make delicious grilled chicken. Preparing them in advance will make cooking

much easier.

[Ingredients]

  • 1kg chicken for braised chicken stew

  • 1 green onion, 3-4 pinches of salt, 4 tablespoons red pepper flakes, 3 tablespoons sugar, 3 tablespoons soy sauce,
2 tablespoons oyster sauce, 4 tablespoons ketchup, 1 tablespoon gochujang (Korean chili paste)

  • 1 tablespoon minced garlic, 0.5 tablespoon minced ginger, 20 twists of whole black pepper

2. Cooking Steps

2-1

I simply washed the chicken to remove any remaining blood and internal organs before using it.

After washing the chicken for braised stew under running water, place it on a strainer to drain as much water

as possible.

Cut off the wing tips with scissors as they can cause off-flavors, and cut the tendons inside the drumsticks by

rotating around them.

Cutting this way makes the meat puff up nicely when grilled, making it easier to eat.

2-2

Heat the frying pan thoroughly over high heat. Place the well-drained chicken with the skin side down and grill.

(Make sure the chicken pieces don’t overlap as much as possible) You must put the chicken in when

the pan is fully preheated to prevent sticking!

Sprinkle about 3 pinches of salt and grill on high heat for 3 minutes in this state. (Be careful not to flip in the middle!)

2-3

During this time, occasionally open the lid and flip the pieces to grill them golden brown.

2-4

Cut 1 green onion into 4-5cm lengths, and after 10 minutes, add the green onion and stir evenly so

the onion oil can come out. Cover and grill for 5 minutes. (Use medium heat at this time too.)

2-5

Reduce to low heat and let it steam for 2 minutes.

2-6

Transfer the well-grilled chicken to another container temporarily. (Excluding the green onions)

3. Making the Sweet and Spicy Sauce

3-1

Now it’s time to make the seasoned chicken sauce. With the heat turned off,

add 4 tablespoons of red pepper flakes and mix evenly to make chili oil. If there’s not enough oil,

drizzle some more cooking oil around.

3-2

Add 4 tablespoons red pepper flakes, 3 tablespoons sugar, 3 tablespoons soy sauce, 2 tablespoons oyster sauce,

4 tablespoons ketchup, 1 tablespoon gochujang, 1 tablespoon minced garlic, and 0.5 tablespoon minced ginger.

If you plan to eat with children, you can skip the gochujang and reduce the amount of red pepper flakes.

3-3

Turn the heat to low and stir-fry while mixing.

3-4

Add 20 twists of whole black pepper and 5 tablespoons of corn syrup, stirring as if warming the seasoning.

They say adding corn syrup at this point gives it that commercial taste! This completes the seasoned

Korean Yangnyeom Chicken sauce.

3-5

Put all the grilled chicken into the seasoning sauce and quickly stir-fry over high heat.

3-6

It’s important to stir-fry quickly over high heat so the seasoning penetrates the chicken!

3-7

Sprinkle sesame seeds on top and the Korean Yangnyeom Chicken is finally complete!!
